Celebrating Chocolate Cake

JANUARY MARKS National Chocolate Cake Day and to celebrate this wonderful date we are taking a look at some unusual chocolate cake recipes. Check out our top picks below…

Salted Dark Chocolate, Rye & Courgette Cake
Go all Heston Blumenthal with this quirky cake recipe.  Mix rye flour, spelt flour, cocoa powder and sugar in a large bowl with ½ tsp salt. Then mix butter, buttermilk and eggs in a jug and pour into the dry ingredients. Next up add the grated courgettes and finely chopped dark chocolate then scrape into the tin. Bake for 45 minutes and finish off with chunky toasted rye breadcrumbs.

Chocolate & Lime Cake
Give chocolate cake a zesty twist with lime. Beat butter and light brown sugar until pale and fluffy then add eggs and fold in the flour and cocoa powder. Spoon into two cake tins and bake for 20 minutes. Next up, gently heat lime juice and caster sugar until the sugar dissolves. While the cake and syrup are still warm, pierce the cakes all over using a skewer and spoon over the syrup and leave to cool – finish off with candied lime zest.

White Chocolate & Cherry Loaf
A tad indulgent but hey we all need a little lift! Beat butter and sugar until fluffy then add eggs, vanilla extract and fold in the flour until you have a smooth mixture. Dust cherries in flour and carefully stir half of the fruit and chocolate into the mixture. Spoon into a tin and scatter the remaining cherries and chocolate on top. Bake for 75 minutes and finish off with white chocolate curls and fresh cherries.
