Savour the Greens

MAY IS National salad month so it’s the perfect time to celebrate the crisp, refreshing, and versatile world of salads!

As the days grow warmer, there’s no better way to embrace the sunnier days than tossing together vibrant ingredients into a delicious salad. Check out our quick and easy recipes…

Classic Garden Salad

Ingredients:
Mixed greens – lettuce, spinach, rockets
Cherry tomatoes, halved
Cucumber, sliced
Carrots, grated
Red onion, thinly sliced
Bell peppers, sliced
Optional toppings: croutons, sunflower seeds, feta cheese
Dressing: Balsamic vinaigrette

Instructions:

  1. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, carrots, red onion, and bell peppers.
  2. Toss the salad with your preferred dressing until well coated.
  3. Sprinkle with optional toppings if desired.

Serve immediately and enjoy the freshness!

Caprese Salad Skewers

Ingredients:
Cherry tomatoes
Fresh mozzarella balls
Fresh basil leaves
Balsamic glaze
Salt and pepper to taste
Skewers or toothpicks

Instructions:

  1. Thread a cherry tomato, a mozzarella ball, and a basil leaf onto each skewer or toothpick.
  2. Arrange the skewers on a serving platter.
  3. Drizzle with balsamic glaze and sprinkle with salt and pepper.

Serve as a delightful appetizer or light snack.

Quinoa Salad with Lemon Vinaigrette

Ingredients:
Cooked quinoaCucumber, dicedCherry tomatoes, halved
Red onion, finely chopped

Fresh parsley, chopped
Feta cheese, crumbled
Lemon vinaigrette: lemon juice, olive oil, honey, salt, and pepper

Instructions:

  1. In a large bowl, combine the cooked quinoa, cucumber, cherry tomatoes, red onion, parsley, and feta cheese.
  2. In a small jar, shake together the lemon juice, olive oil, honey, salt, and pepper to make the vinaigrette.
  3. Pour the vinaigrette over the salad and toss gently to combine.

Chill in the refrigerator for at least 30 minutes before serving to allow the flavours to meld together.
